BooIt NG is pretty good for your purpose, I'm using it since long. However, my earlier version was a bit technical in the beginning from what I know.
And it's also true: Acronis will make easier doing what you want, and it's not much more expensive, if at all. Acronis like BootIt can directly write to a DVD since version 10 AFAIK. My own C-system partition fits on a single DVD - or at least did so some weeks ago ;-)
Acronis can btw split an image between more CDs or DVDs if I'm not mistaken, no idea whether the latest verions of BootItNG do know that trick.

Fred Langa recommended that program in his latest newsletter as a
backup tool. From what's on their website, it looks like maybe it
