Definitely use ethernet  over USB (where available) specially for large 
/ prolonged data flows within a LAN or Internet streams (movies, gaming, 
TV etc.)
The USB bus can be a 'bottleneck' (very generally speaking) when it 
comes to the above data flows. Much of this is dependent on the hardware 
on your end past the USB bus as to what the data is about and what 
hardware is used to handle/process it.  It's a horses for courses thing 
as it's dependent also on what other devices are also connected to and 
actually using other USB ports at the same time.
A higher rate of latency will most certainly be encountered when gaming 
(for instance) over the internet.  If you suffer the most latency you 
will undoubtedly loose the game - 'bang your dead before you know who 
was shooting at you' :-)
