Keeping in mind that

(a) I have only used Outlook many years ago as part of an IT course

(b) you have not mentioned what OS your friend is using

(c) you have not indicated whether this is a new problem (i.e. he was
using Outlook 2007 successfully for X months or years without this problem
and something happened to change it)

hopefully some of the following links from a variety of Google searches
might be helpful (for this or other Outlook problems). Hopefully, too, it's
not a virus or other malware problem. I didn't find anything about the
contact and subject fields being reversed but found various posts about
reasons that the contacts might not display when using the "To" button.

There were multiple posts about problems with, or caused by, synchronising
Outlook 2007 contacts with BlackBerry, iPhone, iPod touch, iTunes (see

for one example) .
